Pumpkin Swirl Cheesecake from Martha Tolcher
2 c vanilla wafer crumbs 1/4 c margarine, softened
2 8 oz packages light Neufchatel cheese, softened
3/4 c sugar 3 eggs
1 t vanilla 1 c canned pumpkin
3/4 t cinnamon 1/4 t ground nutmeg
Combine crumbs and margarine. Press onto bottom and sides of 9" springform pan. Combine Neufchatel cheese, 1/c sugar, and vanilla mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Reserve 1 cup cheese mixture. Add pumpkin, remaining sugar and spices to other part of mixture. Mix well. Layer half of the pumpkin mixture over crust. Repeat layers. Cut through batter with knife several times for marble effect. Bake at 350 degrees for minutes. Loosen cake from rim of pan. Coll before removing. Chill before serving.

6 egg yolks
3 c plain flour
6 egg whites
1 t vanilla
pinch of salt (optional)
Cream butter and sugar, add egg yolks and flour alternatively. Then, add egg whites unbeaten and vanilla. Mix thoroughly. Pour into a well-greased tube pan. Bake at 325 degrees for 1 hour 15 minutes or until done.

1 t vanilla
Flatten one package crescent rolls not a cookie sheet, securing "joints". Mix well cream cheese, sugar, and vanilla. Spread this mixture onto crescent roll. Flatten second package crescent rolls and place on top of cream cheese mixture. Bake at 350 degrees for 30 minutes. If desired, glaze with confectioner's sugar and water mixture. I double this recipe as it tastes great and is in demand.

1 can condensed milk
3 eggs, yolks separated
2 T powdered sugar
1/4 t cream of tarter
3 lemons, grate rind and extract juice
In a bowl, mix together condensed milk and 3 egg yolks. Add rind and juice of lemon and mix thoroughly. Pour into pie shell. Beat egg white until stiff. Add powdered sugar and cream of tarter. Spoon onto pie filling and use teaspoon to form peaks. Brown in oven. Serve hot or cold.

2 1/2 c self-rising flour
1 c milk
1 T butter-nut flavoring
Cream butter, crisco, sugar, and eggs on high speed for 10 minutes. On medium, add flour and milk alternatively and beat for one minute. Add the flavoring and mix. Pour in 3 - 9" pans or 4 - 8" pans. Bake in a 350 degree oven for approximately 20 minutes. Cool.
Icing:
1 stick margarine or butter
1 box confectioner's sugar
8 oz cream cheese
1 T butternut flavoring
1 c finely chopped pecans
Blend well.

Jelly Roll from Cheryl Goff
Preheat oven to 375 degrees.
Line a greased jelly roll pan with waxed paper and grease the waxed paper.
Beat 3 eggs. Gradually beat in 1 c sugar
Beat in 5 T water and 1 t vanilla all at once.
Sift together:
1 c flour
1/4 t salt
1 t baking powder
Beat in all at once. Bake 15 minutes or until golden brown. When it comes out of the oven place the cake on a tea towel dusted with powdered sugar. Remove the wax paper and roll starting with the narrow end. Cool in the towel, on a wire rack. When cool, unroll and spread with jelly or jam. Roll again and slice.

Mix together.
Add all the dry ingredients too wet. Cream together, but do not use an electric mixer. Use a spoon. Add:
3 c small cubed apples
1 c raisins
1/2 c pecans or walnuts
1/2 c milk (add slowly)
It may be difficult to stir. Pour in a 9x13" pan. Bake 45-50 minutes in a 350 degree oven.
Optional: I sprinkle a sugar/cinnamon mixture on the top when I put it in the oven.

4 oz vanilla instant pudding
1 1/2 c water
4 eggs
1/2 c vegetable oil
1 t vanilla
12 oz package chocolate chips
1 T flour
Preheat oven to 350 degrees. Combine dry mixes, then add liquids and beat on high for 2 minutes. Combine chocolate chips with flour and fold into batter.
Grease and flour a 10" tube pan. Bake for 80-90 minutes. Cool for 30 minutes, then remove from the pan. May dust with powdered sugar.

1 c chopped pecans
1/3 c butter, sliced pieces
Sprinkle on top, in order, of the potato mixture. Bake 30 minutes at 350 degrees.

1 c chopped walnuts or pecans (optional)
1 c milk powder
In a large bowl, mix all the ingredients and form into balls. Then, wrap them in colored foil and keep them in the refrigerator.
As children, Deborah's mother always encouraged us to make and decorate goodies for our friends and neighbors. This was an easy, "no cooking" recipe! We used our imaginations to beautifully pack these delicious treats and joyfully present them.
